Egg prices hit a record high as the U.S. contends with an ongoing bird flu outbreak, but consumers didn’t need government figures released Wednesday (February 12, 2025) to tell them eggs are terribly expensive and hard to find at times.

The latest monthly consumer price index showed that the average price of a dozen Grade A eggs in U.S. cities reached $4.95 in January, eclipsing the previous record of $4.82 set two years earlier and more than double the low of $2.04 that was recorded in August 2023.

The spike in egg prices was the biggest since the nation’s last bird flu outbreak in 2015 and accounted for roughly two-thirds of the total increase in food costs last month, according to the U.S. Bureau of Labor Statistics.

Of course, that is only the nationwide average. A carton of eggs can cost $10 or more in some places. And specialized varieties, such as organic and cage-free eggs, are even more expensive.

“We do use eggs a little less often now. You know, because of the price,” said Jon Florey as he surveyed his options in the egg case at Encinal Market in Alameda, California. “I was going to make a quiche that I like to make and it’s about six eggs, so I figured I’d do something else.”

Relief is not expected any time soon. Egg prices typically spike around Easter due to high holiday demand. And the U.S. Department of Agriculture predicted last month that egg prices would likely go up 20% this year.

Even if shoppers can afford eggs, they may have difficulty finding them at times. Some grocers are having trouble keeping their shelves stocked, and customers are encountering surcharges and limits on how many cartons they can buy at a time.

Encinal Market owner Joe Trimble said he has a hard time getting all the eggs he orders from his suppliers, so most of the time his shelves are only about 25% full.

“It’s something you don’t think about until you look at the shelf and it’s nearly empty,” Mr. Trimble said. Eggs are “just expected to be there in the same way you expect there to be milk. It’s a key item to have in a grocery store because people don’t go out looking for something else to eat on a Saturday morning. They want it. They want to have some scrambled eggs or over-easy eggs on a Saturday morning.”

The main reason that eggs are more expensive is the bird flu outbreak. When the virus is found on a farm, the entire flock is killed to limit the spread of the disease. Because massive egg farms may have millions of birds, just one outbreak may put a dent in the egg supply. Nearly 158 million birds have been slaughtered overall since the outbreak began.

The Agriculture Department says more than 23 million birds were slaughtered last month and more than 18 million were killed in December to limit the spread of the bird flu virus. Those numbers include turkeys and chickens raised for meat, but the vast majority of them were egg-laying chickens.

And when there is an outbreak on a farm, it often takes several months to dispose of the carcasses, sanitize the barns and raise new birds until they are old enough to start producing eggs, so the effects linger.

Bird flu cases often spike in the spring and fall when wild birds are migrating because they are the main source of the virus, but cases can pop up any time of year. The virus has also spread to cattle and other species, and dozens of people — mostly farmworkers taking care of ill animals — have been sickened.

But health officials say the threat to human health remains low and eggs and poultry are safe to eat because sick animals aren’t allowed into the food supply. Plus, properly cooking meat and eggs to at least 165 degrees Fahrenheit kills any virus, and pasteurization neutralizes bird flu in milk.

Egg farmers also face higher feed, fuel and labor costs these days because of inflation. Plus, farmers are investing more in biosecurity measures to try to protect their birds.

Ten states have passed laws allowing the sale of eggs only from cage-free environments. The supply of those eggs is tighter and focused in certain regions, so the effect on prices can be magnified when outbreaks hit cage-free egg farms.

Many of the egg farms with recent outbreaks were cage-free farms in California. Cage-free egg laws have already gone into effect in California, Massachusetts, Nevada, Washington, Oregon, Colorado and Michigan.

Total demand for eggs is also up significantly in recent years. Consumers are buying more eggs, and the growth of all-day breakfast restaurants is adding to demand.

CoBank analyst Brian Earnest said the current cost of eggs could discourage some buying, which would ease the demand pressure but might not have a noticeable effect. It will likely take months for egg producers to fill the gaps in supply.

“As consumers continue to stock up on eggs, supplies at the store level will remain tight, and with Easter right around the corner, that could prolong the tighter supplies,” Mr. Earnest said.

While prices remain elevated, producers of baked goods and other food items that rely on eggs as a main ingredient will have to decide how much to increase prices or reduce production, he said.

The World Health Organization voiced alarm Thursday at the growing spread of H5N1 bird flu to new species, including humans, who face an “extraordinarily high” mortality rate.

“This remains I think an enormous concern,” the UN health agency’s chief scientist Jeremy Farrar told reporters in Geneva.

The current bird flu outbreak began in 2020 and has led to the deaths of tens of millions of poultry, with wild birds also infected as well as land and marine mammals.

Cows and goats joined the list last month — a surprising development for experts because they were not thought susceptible to this type of influenza.

The A (H5N1) strain has become “a global zoonotic animal pandemic”, Farrar said.

“The great concern of course is that in… infecting ducks and chickens and then increasingly mammals, that virus now evolves and develops the ability to infect humans and then critically the ability to go from human to human.”

So far, there is no evidence that the influenza A(H5N1) virus is spreading between humans.

But in the hundreds of cases where humans have been infected through contact with animals, “the mortality rate is extraordinarily high”, Farrar said.

From the start of 2023 to April 1 this year, the WHO said it had recorded 463 deaths from 889 human cases across 23 countries, putting the case fatality rate at 52 percent.

In a worrying development, US authorities earlier this month said a person in Texas was recovering from bird flu after being exposed to dairy cattle.

It was only the second case of a human testing positive for bird flu in the country, and came after the virus sickened herds that were apparently exposed to wild birds in Texas, Kansas and other states.

It also appears to have been the first human infection with the influenza A(H5N1) virus strain through contact with an infected mammal, WHO said.

When “you come into the mammalian population, then you’re getting closer to humans,” Farrar said, warning that “this virus is just looking for new, novel hosts”.

“It’s a real concern.”

Farrar called for beefing up monitoring, insisting it was “very important understanding how many human infections are happening… because that’s where adaptation (of the virus) will happen”.

“It’s a tragic thing to say, but if I get infected with H5N1 and I die, that’s the end of it. If I go around the community and I spread it to somebody else then you start the cycle.”

He said efforts were under way towards the development of vaccines and therapeutics for H5N1, and stressed the need to ensure that regional and national health authorities around the world have the capacity to diagnose the virus.

This was being done so that “if H5N1 did come across to humans, with human-to-human transmission”, the world would be “in a position to immediately respond”, Farrar said, urging equitable access to vaccines, therapeutics and diagnostics.

The deadly H5N1 bird flu virus has spread more aggressively than ever before in wild birds and marine mammals since arriving in South America in 2022, raising the risk of it evolving into a bigger threat to humans, according to interviews with eight scientists.

Of more immediate concern is evidence the disease, once largely confined to bird species, appears to be spreading between mammals. This strain has already killed a handful of dolphins in Chile and Peru, some 50,000 seals and sea lions along the coasts, and at least half a million birds regionwide.

To confirm mammal-to-mammal transmission, scientists would likely need to test infections in live animals.

“It’s almost certainly happened,” said Richard Webby, a virologist at St. Jude’s Children’s Research Hospital in Memphis, Tennessee. “It’s pretty hard to explain some of these large infections and die off without having mammal-to-mammal spread.”

The strain has shown up in dozens of bird species, including some migrating species, which can spread it beyond the region, scientists told Reuters.

As climate change escalates, animals will be forced to move into new territories, mixing with one another in new ways and possibly boosting opportunities for the virus to further mutate.

“It’s a matter of time before you will detect the first South American strain in North America,” said Alonzo Alfaro-Nunez, a viral ecologist at University of Copenhagen.

Human risk

The growing concern has prompted the 35 countries in the Pan American Health Organisation (PAHO) to convene regional health experts and officials at a meeting this week in Rio de Janeiro.

The group plans to launch the world’s first regional commission to oversee bird flu monitoring and response efforts, a PAHO official told Reuters. This has not been previously reported.

Since the virus was first detected in Colombia in October 2022, there have been two known cases in humans on the continent, one each in Ecuador and Chile. Both came from exposure to infected birds.

While those patients survived, H5N1 bird flu is deadly to humans in roughly 60% of cases worldwide.

The World Health Organisation (WHO) is unlikely to raise the risk level for humans from the current “low” without evidence of human-to-human transmission or mutations adapted to human receptors, experts said.

Drugmakers, including GSK and Moderna, have said they are developing bird flu vaccines for humans, and have the capacity to produce hundreds of million so doses within months utilising production lines used for seasonal flu vaccines.

“We’re seeing [the virus] doing little evolutionary steps that are on the long-term moving towards a potential human infection,” said Ralph Vanstreels, a University of California, Davis researcher studying South American variants of H5N1.

Every year, Argentina’s Peninsula Valdes on the windswept Atlantic coast teems with densely packed elephant seals rearing pups.

Last November, Mr. Vanstreels came across a grim scene: hundreds of dead and rotting pups on the beach. Researchers estimate 17,400 pups died, nearly all born to the colony that year.

For each of those pups to have been infected by birds is highly unlikely, scientists said. Pups usually have contact only with their mothers, leading scientists to suspect this is how it spread.

Mr. Vanstreels is part of a group of scientists working to trace the virus’ genetic mutations in South America.

In a draft paper posted on the U.S. Centres for Disease Control and Prevention website, they analysed samples from sea lions, seals and birds from up the coast from Peninsula Valdes. Comparing the genomes from these samples with those collected in North America in 2022 and Asia earlier, the team identified nine new mutations.

The same mutations were found in samples collected in 2022 and 2023 in Chile and Peru, which were also hit by mass mortality of sea lions and birds.

“This is the first time this virus is so adapted to wildlife,” Mr. Vanstreels said. “Clearly something happened in Peru and in northern Chile where they acquired these new mutations.”

In the draft paper, researchers noted that the same mutations were present in one of the continent’s two human cases, a 53-year-old man who lived one block from the seashore where seabirds congregated.

Researchers said that case “highlights the potential threat posed by these viruses to public health.”

Regional response

With health officials and experts meeting in Rio this week, Latin American countries will be pressed to boost disease surveillance in the wild.

The region’s patchy data and limited resources has left scientists struggling to understand how the disease is spreading in the wild, with the number of cases likely much higher than reported. Some cases are not being sampled or lab-tested, scientists said.

Bolivia, for example, did not register a case in the wild last year, though the disease has been detected in surrounding countries, said Manuel Jose Sanchez Vazquez, epidemiology coordinator for PAHO’s veterinary health centre.

Managing the disease response can also be complex, Mr. Sanchez noted. Threats to humans are dealt with by public health officials, while threats to poultry or livestock fall to agriculture or veterinary authorities. In wild animals, the purview typically falls to environmental officials.

The new regional commission, expected to be announced on March 14, would aim to set standard protocols for monitoring, handling and reporting cases among various government agencies. It could also help in pooling laboratory resources, Mr. Sanchez said.

“We are worried and we are vigilant,” Sanchez said. “The more adaptation of the virus to mammals, the more likely it is that transmission to humans could happen.” (Reporting by Jake Spring; Editing by Katy Daigle and Bill Berkrot)
